Dark Sky Spirits Ltd, the makers of The Moffat blended malt Scotch whisky, have announced that they have broken ground and started construction on their new Dumfries and Galloway based distillery.
The Moffat Distillery, which is scheduled to open in 2022, will
offer tours, tastings and workshops. It will also serve as creative hub for the
local community.

Since 2018, Dark Sky Spirits Ltd, which was founded by Nick and Erin Bullard, have been pursuing their vision of creating unique Scotch whiskies with a focus on dynamic flavour and authenticity. Those ambitions are now being realised with the construction of the distillery, which will see the business add hand-crafted single malt whisky to their portfolio.
Combining the symbol of traditional distilling with modern
technology, the distillery will house Scotland’s only direct wood-fired still,
which will create a unique signature flavour for the whisky whilst also
creating a sustainable production process.
Commenting on the news, Nick Bullard, said: “We live and breathe

high-quality interactions with people, telling the story of our culture and
heritage and exploring the flavours of our local area. Each whisky we make is
developed in consultation with the community it represents, and this approach
is at the heart of Dark Sky Spirits. Each dram, each experience reflects who we
are as a community and as a region.”
The inaugural single malt from The Moffat Distillery will mature for at least seven years before it’s released, but in the meantime they will continue blending whisky and developing other spirts and liqueurs.
